For Terry Bishop, who operates three Rachel’s Kitchen locations with the help of his children, the best part about family ownership is the financial security.
“It’s incredibly comforting to know that all of my children are receiving a competitive wage in a reliable, safe, working environment that offers plenty of room for growth,” noted Bishop, whose restaurants are situated throughout Las Vegas. “The only notable drawback is scheduling our annual family vacation.”
Bishop, who worked in the restaurant industry for decades, became involved with the gourmet fast/casual franchise in 2019, after being retired for six months.
“I thought it was time to retire, but I was only 54 and struggled with all of my newfound freedom,” Bishop said. “I certainly didn’t want to punch a clock for anyone, so I started investigating purchasing a franchise. A broker suggested Rachel’s Kitchen, which I have always loved and respected. I had no idea it was a franchise and honestly couldn’t believe how seamless and turnkey the operation was.”
Popular with several different niche markets – college students, local business people, families, and women who lunch – Rachel’s Kitchen offers a casual but elegant atmosphere that is slightly more elevated than your average chain eatery.
Born out of Debbie Roxarzade’s ambitious culinary passion and named after her daughter, the quaint café features delicious and reasonably priced bistro fare.
“I whole-heartedly support the mission of Rachel’s Kitchen – everything is fresh, no heating lamps, holding ovens or microwaves. Fresh produce is delivered daily, and the only things we keep in the freezer are french fries, onion rings, and maybe some frozen berries for our smoothies,” said Bishop.
Bishop opened his first location in downtown Las Vegas before opening a kiosk-style site with in the nearby Cleveland Clinic Lou Ruvo Center for Brain Health. He then built a third restaurant in Nevada’s Town Square, an open-air shopping, dining, office, and entertainment center on Las Vegas Boulevard. Bishop’s children, Tory, Nic, and Cat, maintain managerial positions at each restaurant.
“I love that all of my children are involved in this venture,” Bishop concluded.
